Territory
The winery is located on the southeast side of Mt. Etna Park, in the district of Carpene/Monte Gorna, at an altitude of 760 metres. 
Soil
Volcanic, sandy, skeletal soil with organic and mineral substances. Arranged in terraces.
Training system
Single cordon espalier,  2.20 m x 0.85 m plant spacing.
Recognition
DOC - Registered Designation of Origin (D.P.R. 11/08/1968).
Production area 
Southeast side of Mt. Etna at 730 m. a.s.l.
Climate
Moderate and temperate with drastic temperature differences between day and night.
Grape varieties 
Carricante 60% and Catarratto 40%.
Growing method 
Traditional and manual, with a limited use of pesticides.

7000 kg/ha
Winemaking
After crushing, the carefully selected white grapes are cold-macerated for 24 hours, followed by a soft pressing.
The juice obtained after a 48-hour period of static decantation is fermented in steel tanks for about a month at a controlled temperature.    
Maturation
In steel tanks for 3 months on the fine lees.
Ageing
No less than 3-4  months in the bottle.
Colour
Brilliant straw yellow with golden highlights.
Aroma
Intense, with hints of fresh fruit and broom and jasmine flowers.
Flavour
Dry and wonderfully fresh-tasting with a mineral edge, well-orchestrated and balanced.
Alcohol content
12.5%  Vol.
Serving temperature
10 - 12° C.
Pairings
Wonderful with delicate pasta dishes, fish and shellfish.
