Etna rosso DOC in barrique

Territory
The winery is located on the southeast side of Mt. Etna Park, in the district of Carpene/Monte Gorna, at an altitude of 760 metres. 
Soil
Volcanic, sandy, skeletal soil with organic and mineral substances. Arranged in terraces.
Training system
Single cordon espalier,  2.20 m x 0.85 m plant spacing.
Recognition
DOC - Registered Designation of Origin (D.P.R. 11/08/1968).
Production area 
Southeast side of Mt. Etna at 760 m. a.s.l.
Climate
Moderate and temperate with drastic temperature differences between day and night.
Grape varieties 
Nerello Mascalese 80% and Nerello Cappuccio 20%.
Growing method 
Traditional, without the use of pesticides, in accordance with certified organic growing techniques for over 10 years.
Grape yield
7000 kg/ha
Winemaking
Cold soak and fermentation on the skins in temperature controlled fermenting vats.   
Maturation
In steel tanks for 3 months.
Ageing
In barriques for 3 months and no less than 12 in the bottle.
Colour
Intense ruby red.
Aroma
Intense with hints of forest fruits and vanilla.
Flavour
Full, warm, mildly tannic, well-orchestrated and pleasant.
Alcohol content
13% Vol.
Serving temperature
18° - 20°C
Pairings
A wonderful wine to drink through the meal, with red meats, 
cold cuts and cheeses.
