Territory
The winery is located on the southeast side of Mt. Etna Park, in the district of Carpene/Monte Gorna, at an altitude of 760 metres. 
Soil
Volcanic, sandy, skeletal soil with organic and mineral substances. Arranged in terraces.
Training system
Single cordon espalier,  2.20 m x 0.85 m plant spacing.
Recognition
DOC - Registered Designation of Origin (D.P.R. 11/08/1968).
Production area 
Southeast side of Mt. Etna at 730 m. a.s.l.
Climate
Moderate and temperate with drastic temperature differences between day and night.
Grape varieties 
Nerello Mascalese 80% e Nerello Cappuccio (20%).
Growing method 
Traditional and manual, with a limited use of pesticides.

Winemaking

Cold soak and fermentation on the skins in temperature controlled fermenting vats. 

Maturation

In steel tanks for 8 months. 

Ageing

In steel tanks for 6 months and no less than 3 in the bottle. 

Colour

Intense ruby red.
Aroma
Intense with hints of forest fruits.
Flavour
Full, worm, mildly tannic, orchestated and pleasant.
Alcohol content
12.5%  Vol.
Serving temperature
10 - 12° C.

Wonderful with delicate pasta dishes, fish and shellfish.
